Start with certification language

GOTS addresses textiles made with certified organic natural fibers and includes processing and labeling requirements. GOLS is the relevant standard encountered for organic latex. Verify what the certification applies to.

Then evaluate the mattress normally

Certification does not tell you whether a mattress will feel soft or firm, contour slowly or rebound quickly, isolate motion well, or suit your preferred sleep position. Construction still matters.

Organic latex vs organic textiles

Latex and textile components are different material categories. A mattress may carry certification claims on one or both. Read the actual claim rather than inferring total-product certification.
